Step 1
Cook the
Brown Rice (125 g)
by placing
Water (1.2 kg)
in the Thermomix jug. Pour the rice into the basket and place in the jug.
Step 2
Cook for 35 minutes on Varoma speed 3.
Step 3
Place the
Fresh Cilantro (35 g)
,
Fresh Parsley (35 g)
,
Fresh Basil (20 g)
,
Green Bell Peppers (80 g)
,
Garlic (2 cloves)
,
Salt (8 g)
,
Water (50 g)
,
Olive Oil (90 g)
,
Pistachios (30 g)
and the juice from
Lemon (1)
in the jug and blend on speed 5 for 1 minute.
Step 4
Pour into a pan (do not clean the jug yet) and cook on a low temperature for around 4 minutes, until you can begin to smell the aroma.
Step 5
While you are doing that, place the
Milk (240 mL)
into the jug and blend on speed 10 for 10 seconds.
Step 6
Pour the milk mixture into the pan and continue cooking until it thickens, about 10 minutes.
Step 7
Crack two
Eggs (2)
into the pan and crumble over
Feta Cheese (20 g)
, cover with a lid. Cook until the eggs are set but still runny, about 10 minute.
Step 8
Serve over brown rice. Enjoy!
