Step 1
Preheat oven to 375 degrees F.
Step 2
Whisk together All-Purpose Flour (250 g) , Baking Powder (7 g) , Baking Soda (1 g) , and Coarse Salt (6 g) in processor. Place Unsalted Butter (110 g) in processor and pulse until mixture resembles coarse meal.
Step 3
Add Low-Fat Buttermilk (120 mL) and Heavy Cream (120 mL) ; pulse until just combined.
Step 4
Turn out dough onto a lightly floured work surface, and pat into a 6 1/2-inch round (about 1 inch high). Using a lightly floured 2 1/2-inch cutter, cut out rounds.
Step 5
Transfer to a buttered cast iron skillet spacing about 1/2 inch apart. Gather scraps, reshape, and cut out.
Step 6
Brush tops with buttermilk.
Step 7
Bake until tops are golden, 22 to 24 minutes.
Step 8
Serve hot and enjoy!
