Step 1
Preheat oven to 350 degrees F (180 degrees C).

Line or butter two 8-inch baking pans with parchment paper. Set aside.
Step 3
Using an electric mixer, combine
All-Purpose Flour (250 g)

Baking Soda (9 g)

Salt (6 g)
,
Granulated Sugar (400 g)
, and
Ground Cinnamon (15 g)

Step 4
Add
Farmhouse Eggs® Large Brown Eggs (4)
one at the time, and mix well after each addition. Scrape down the sides of the bowl with a spatula.
Step 5
Add
Vegetable Oil (360 mL)
mixing well on a medium speed. Add
Carrots (455 g)
and mix on low until all is well blended.
Step 6
Pour batter into the cake pans. Bake in center rack of oven for 35-40 minutes or until cake tester comes out clean.
Step 7
Using an electric mixer on a medium speed, cream the
Cream Cheese (225 g)
and
Unsalted Butter (1 stick)
for 5 minutes until light and creamy.
Step 8
Add
Powdered Confectioners Sugar (440 g)
and
Vanilla Extract (10 mL)
, mixing until light and fluffy. Using a spatula scrape down sides of bowl. Stir in
Pecans (50 g)
.
Step 9
To ensure the proper consistency, refrigerate for about 30 minutes.
Step 10
Frost cake. Serve and enjoy!
