Step 1
Preheat your oven to 350 degrees F (180 degrees C).
Step 2
In the bowl of your electric mixer whisk up
Eggs (2)
and
Granulated Sugar (80 g)
until light and fluffy.
Step 3
Add in the
Lemon Marmalade (150 g)
,
Ghee (50 g)
, and
Water (100 mL)
, slowly whisk those in. Next, add in the
Cake Flour (150 g)
,
Type 2 Flour (50 g)
,
Salt (1 pinch)
, and
Baking Powder (10 g)
gently folding them into the batter with a spatula.
Step 4
Last fold in the
Pears (200 g)
.
Step 5
Grease and dust with flour a cake pan of 25-cm diameter. Pour batter into the cake pan. Bake in a preheated oven at 350 degrees F (180 degrees C) for 40 minutes or until a tooth stick inserted in the centre comes out clean.
Step 6
Let the cake cool down completely, then gently remove it from the pan and place it on a plate.
Step 7
Warm up the
Lemon Marmalade (50 g)
with a few tablespoons of water, and brush it on top of the cake

Slice it up and enjoy!
