Step 1
In a medium mixing bowl, combine
All-Purpose Flour (250 g)

Caster Sugar (35 g)

In a separate bowl combine
Eggs (2)

Milk (420 mL)

Vanilla Extract (5 mL)

Step 3
Slowly add wet ingredients to the dry mix. Stir slowly until just combined, leaving lumps. Let batter sit 10 minutes.
Step 4
In a hot nonstick skillet or griddle, heat
Vegetable Oil (as needed)
over medium high. When oil is hot, cook batter in 1/4 cup sized amounts.
Step 5
Cook approximately 2 minutes until top is bubbly and edges are golden brown. Flip and cook another 1-2 minutes. Repeat until batter is gone.
Step 6
In a small bowl, combine
Honey (115 g)
,
Light Corn Syrup (80 mL)
,
Lemon (1/2)
,
Butter (15 g)
, and
Ground Cinnamon (1 g)
.
Step 7
Microwave in 15 second increments, stirring after each. Continue until butter is melted through.
Step 8
Serve pancakes with syrup and
Butter (to taste)
