Step 1
In a medium sized bowl, mix together
Unsalted Butter (110 g)

Coconut Sugar (170 g)

Egg (1)

Vanilla Extract (5 mL)
, and
Heavy Cream (15 mL)

In a separate bowl, mix together
Whole Wheat Flour (180 g)
,
Baking Powder (4 g)
,
Baking Soda (1 g)
, and
Salt (3 g)
. Add dry ingredients to butter mixture and mix until well combined. Cover and refrigerate for 30 minutes.
Step 3
Preheat oven to 350 degrees F (180 degrees C). Spray a mini muffin pan with cooking spray.
Step 4
Roll pieces of cookie dough in to 2-3 inch balls. Place them into the muffin pan and bake for 10-12 minutes.
Step 5
Using the rounded end of the handle of a cooking tool, such as a ice cream scoop or large wooden spoon, press into each baked cookie while still in the pan to form a tart. Allow to cool and remove from pan.
Step 6
In a separate bowl, combine the
Cream Cheese (225 g)
,
Powdered Confectioners Sugar (55 g)
,
Heavy Cream (60 mL)
,
Vanilla Extract (5 mL)
, and
Orange Extract (5 mL)
. Using an electric mixer, mix all ingredients until completely combined.
Step 7
Spoon the filling mixture into a pastry decorating bag. Pipe into tarts.
Step 8
Slice the
Fresh Strawberries (225 g)
.
Step 9
Top with a strawberries slice. Serve and enjoy.
