Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Melt
Butter (120 g)
in a saucepan. Stir in
Water (60 mL)

Vanilla Extract (5 mL)
, and
Honey (85 g)
.

In a mixing bowl stir together
Whole Wheat Flour (270 g)
,
Evaporated Cane Sugar (95 g)
,
Baking Powder (4 g)
,
Baking Soda (2 g)
,
Salt (3 g)
and
Ground Cinnamon (1 g)
. Add
Unsweetened Cocoa Powder (30 g)
if you want chocolate crackers.
Step 4
Add liquid ingredients to dry ingredients and stir until you form a ball.
Step 5
Roll out to about 1/4 of an inch on parchment paper or lightly floured surface. Cut animal shapes with cookie cutters. Place on parchment lined cookie sheet. Bake for 10 - 12 minutes.
Step 6
Turn off oven and leave crackers in oven 3-5 minutes longer if you like to crisp them up. If you like,you can make icing during this time. Mix
Powdered Confectioners Sugar (110 g)

Vanilla Extract (5 mL)
,
Milk (40 mL)
until thick.
Step 7
Ice the cookies or eat without.
