Author's Notes

If the pie has been frozen for more than a couple of hours, or overnight, just allow it to sit at room temperature 30 minutes to an hour, to allow ice cream to soften before serving.

Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Prepare Pie Crust by mixing together Graham Crackers (2 pckg) , Coconut Sugar (75 g) , and Butter (120 g) .
Step 3
Pour and spread the mixture evenly in an 8 or 9-inch pie shell; pressing to form a nice crust.
Step 4
Bake 6-7 minutes.
Step 5
Allow to cool completely before filling.
Step 6
While Crust is cooling, whip Heavy Cream (300 mL) until soft peaks form. Set to the side.
Step 7
Put Vanilla Greek Yogurt (490 g) , zest and juice from Limes (2) into a bowl and mix together well.
Step 8
Add Powdered Confectioners Sugar (75 g) and mix together well.
Step 9
Fold the yogurt mixture into the whipped cream. Stir until well blended.
Step 10
Pour the cream and yogurt mixture into the cooled pie crust.
Step 11
Place into the freezer and freeze 1-2 hours before serving.
Step 12
Garnish with Whipped Cream (to taste) , Limes (to taste) and the reserved graham cracker crumbs.
