Step 1
Pour
Cottage Cheese (225 g)
and
Eggs (4)
in a blender.
Step 2
Blend together until thoroughly mixed.
Step 3
Pour blender ingredients into a bowl and add the
Coconut Flour (60 g)
,
Salt (3 g)
,
Baking Soda (2 g)
and
Vanilla Extract (5 mL)
. Stir well and allow to sit for 5 minutes. The batter will thicken while it sits.
Step 4
Put
Coconut Oil (30 mL)
or more into a frying pan and bring to low heat. Scoop 1/4 cup of batter and pour onto frying pan.
Step 5
Cook about 3 minutes on 1 side and 2 minutes once flipped.
Step 6
Serve with your choice of fresh berries, or a sugar free syrup. Enjoy!
