Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Line a muffin tray with paper cups or grease really well with Coconut Oil (as needed) .
Step 3
Combine all the dry ingredients into a large bowl: Old Fashioned Rolled Oats (90 g) , Almond Flour (120 g) , Oat Bran (95 g) , Ground Flaxseed (40 g) , Ground Cinnamon (3 g) , Baking Soda (5 g) , and Ground Nutmeg (1 g) .
Step 4
In a small bowl, combine Rice Milk (180 mL) , Maple Syrup (120 mL) , and Eggs (2) .
Step 5
Add the wet ingredients to the large bowl of dry ingredients and mix just until combined.
Step 6
Fold in Unsweetened Dried Cranberries (120 g) .
Step 7
In a small bowl, combine Walnuts (30 g) and Coconut Sugar (15 g) .
Step 8
Pour the batter into 12 muffin tins. Evenly divide walnut coconut sugar topping between 12 muffins.
Step 9
Bake for 22-25 minutes, until a toothpick inserted comes out clean and the tops are golden brown.
Step 10
Let cool for 5 minutes then remove from muffin tin. Let cool another 10 minutes before serving. Enjoy!
