Step 1
Grease a rimmed quarter sheet pan. Set aside.
Step 2
Preheat the oven to 350 degrees F (180 degrees C). In a large mixing bowl, whisk the Farmhouse Eggs® Large Brown Eggs (10) , Heavy Cream (15 mL) , Kosher Salt (3 g) , and Ground Black Pepper (1 g) together.
Step 3
Add in Zucchini (1/2) , Red Onion (1/2) , Fresh Spinach (240 mL) , Goat Cheese (60 g) , Sun-Dried Tomatoes in Olive Oil (25 g) and Fresh Dill (as needed) . Stir to combine.
Step 4
Pour the egg mixture into a greased quarter sheet pan.
Step 5
Bake in a preheated oven for 15 to 20 minutes.
Step 6
Garnish with more goat cheese and fresh dill before serving with some English Muffins (6) . Enjoy!
