Step 1
This will fit a 10x7 baking dish, at least 2" deep. In a mixing bowl add the
Lemon Zest (40 g)
,
Granulated Sugar (200 g)
, and
Egg Yolks (8)
. Beat on high for about 5 minutes or until pale yellow.
Step 2
In a separate bowl mix the
Cream Cheese (455 g)
and
Heavy Cream (455 g)
on high.
Step 3
Fold the egg mixture into the cream cheese mixture & set aside.
Step 4
Pour the
Lemon Juice (60 mL)
,
Water (240 mL)
, and
Powdered Confectioners Sugar (7 g)
into a bowl and mix well.
Step 5
Dip the
Ladyfingers (1 pckg)
quickly in the lemon juice and line the baking dish.
Step 6
Pour 1/2 of the cream mixture on top and spread evenly. Spread the
Fresh Raspberries (250 g)
on top.
Step 7
Repeat a layer of the lady fingers and pour the rest of the cream on top.
Step 8
Place in the fridge to set up approximately 6 hours.
Step 9
Remove, dust the top with the
Raspberry Powder (50 g)
and enjoy!
