Step 1
Preheat oven to 425 degrees F (220 degrees C).
Step 2
In an 8-inch ovenproof skillet over medium heat, add
Extra-Virgin Olive Oil (15 mL)
and brush around the bottom and sides.

Add
Frozen Spinach (300 g)
and
Garlic (2 cloves)
and cook on the stove until heated through, about 5 minutes.
Step 4
In a large bowl, whisk
Farmhouse Eggs® Large Brown Eggs (8)
with
Sea Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 5
Pour eggs over spinach, stir, and then let cook without stirring until edges are cooked and center is semi-firm, about 6-8 minutes.
Step 6
Top with
No Sugar Added Marinara Sauce (120 mL)
,
Shredded Part-Skim Mozzarella Cheese (55 g)
and
Turkey Pepperoni (12 slices)
, if using.
Step 7
Transfer to oven and bake until eggs are cooked and cheese is melted, about 5 minutes more. Optional: Broil for 2-3 minutes for a more golden top.
