Author's Notes

Tip for storing: Take a piece of plastic wrap and smash it down over the top of the guac so that no air can get in. Store in refrigerator until ready to use.

Makes 2 cups guacamole and 72 chips.

Cooking Instructions

Step 1
Roughly mash Avocados (3) with the juice from Lime (1) and Lemon (1) using a potato masher or a fork.
Step 2
Next, add the Red Onions (80 g) and Jalapeño Pepper (1) , then mash into the avocado. Stir in the Fresh Cilantro (8 g) and season with Kosher Salt (to taste) .
Step 3
Preheat oven to 400 degrees F (200 degrees C).
Step 4
Brush the Yellow Corn Tortillas (12) with Safflower Oil (as needed) . Cut them into wedges (6 per tortilla) and sprinkle with Sea Salt (to taste) .
Step 5
Bake in the oven until browned and edges start to curl, about 10 minutes.
Step 6
Toss the chips with juiced Limes (to taste) and serve.
