Cooking Instructions

Step 1
Cook Pasta Shells (225 g) according to package directions and reserve 2 cups of pasta water.
Step 2
Mince the Garlic (2 cloves) .
Step 3
Shuck the Green Peas (150 g) .
Step 4
Chop the Thick-Cut Bacon (4 slices) into 1/2 inch pieces.
Step 5
If using, chop the Fresh Mint (6 g) .
Step 6
In a large skillet over medium heat, render the fat from the bacon until it becomes crispy. Remove the bacon with a slotted spoon to drain on paper towels.
Step 7
Remove and reserve all but 2 tablespoon bacon grease.
Step 8
Reduce heat to medium-low. Add the garlic and saute until fragrant, about 30 seconds.
Step 9
Add the peas and 1 cup of the pasta water. Simmer for 2 minutes if the peas are fresh.
Step 10
Crumble in the Garlic and Herb Gourney Cheese (140 g) and stir until a smooth sauce forms. Thin with additional water if the sauce is too thick.
Step 11
Gently toss pasta, sauce, mint, Parmesan Cheese (45 g) and bacon together. Adjust seasoning to taste with extra Salt (to taste) and Ground Black Pepper (to taste) .
Step 12
Serve right away. Enjoy!
