Cooking Instructions

Step 1
Peel and cube the Sweet Potatoes (590 g) into 1-inch cubes.
Step 2
Add potatoes to a large pot, covering completely with water. Add Salt (6 g) to pot.
Step 3
Bring to a boil and cook 8-12 minutes, or until fork tender. Drain well with a colander.
Step 4
In a large bowl combine the juice from Lemon (1) , Worcestershire Sauce (10 mL) , Apple Cider Vinegar (15 mL) and Garlic (3 g) . Toss with this the sweet potatoes and refrigerate until cold.
Step 5
When ready to serve (even if it's the next day), mix with the potatoes the Mayonnaise (55 g) , Sour Cream (15 g) and Blue Cheese (15 g) . Top with the Scallions (1 bunch) .
