Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
Blitz the
Oats (45 g)
in a blender or food processor to a finer texture.
Step 3
Combine
Organic Red Fife Flour (125 g)
,
Coconut Sugar (75 g)
,
Baking Soda (2 g)
, and blended oats.
Step 4
Melt
Coconut Oil (80 mL)
and add to dry ingredients. Add
Nut Milk (15 mL)
and combine.
Step 5
Roll cookie dough into one large ball and refrigerate for an hour or two. This will make forming the cookies much easier.
Step 6
Grease a cookie sheet or line with parchment paper. Form the cookies into small balls and then flatten with a fork or your fingers.
Step 7
Bake for 12 minutes.
Step 8
When cookies are done baking, let cool completely on a cooling rack.
Step 9
Place
Chocolate Chips (85 g)
in a saucepan on very low heat or use a double boiler to melt completely. Dip each cookie into chocolate and then refrigerate for an hour, then dip or drizzle cookies with chocolate!
Step 10
Serve dipped in chocolate or plain.
