Step 1
Heat Olive Oil (60 mL) in a cast-iron skillet over medium-high heat. Add Garlic (4 cloves) and cook, stirring frequently, for 3 minutes.
Step 2
Add Zucchini (1) , White Mushrooms (225 g) , Yellow Squash (1) , Cherry Tomatoes (285 g) , Salt (3 g) , and Ground Black Pepper (1 g) to the skillet and stir so veggies are well-coated.
Step 3
Preheat your oven’s broiler (optional).
Step 4
Cook for 5 minutes, stirring occasionally until vegetables are tender. Sprinkle Shaved Parmesan Cheese (75 g) over top of the vegetables.
Step 5
Option 1: Cover skillet (don’t remove from heat) and allow the cheese to melt for 1-2 minutes. Option 2: Place cast iron skillet in the oven and broil for 1 minute, or until cheese is melted.
Step 6
Serve immediately!
