Step 1
In a medium bowl, add
All-Purpose Flour (125 g)

Baking Powder (15 g)

Water (240 mL)

Cajun Seasoning (2 g)

Corn Starch (110 g)

Salt (1 pinch)
, and mix until smooth.
Step 2
Dry off the
Shrimp (455 g)
or remove the shell leaving the tail on.
Step 3
Place the
Unsweetened Shredded Coconut (200 g)
in a shallow bowl. Take each shrimp and dip it in the batter and then the coconut, making sure to get an even coat.
Step 4
Fry with
Canola Oil (as needed)
in batches of 3 or 4 until they are golden on all sides. Drain them on a paper towel.
Step 5
Mix together the
Orange Marmalade (320 g)
Wasabi Paste (5 g)
, and juice of the
Orange (1/2)
.
Step 6
Serve the shrimp with the marmalade.
