Step 1
Preheat an oven to 350 degrees F (180 degrees C).
Step 2
Line a baking sheet with a non-stick silicone mat or parchment paper.
Step 3
Add Old Fashioned Rolled Oats (270 g) , Pecan Meal (95 g) , Baking Powder (4 g) , Ground Cinnamon (4 g) , and Sea Salt (as needed) into a large bowl, stir to combine.
Step 4
In separate bowl, combine Cinnamon Apple Sauce (145 g) , Coconut Sugar (55 g) , Honey (85 g) , Milk (120 mL) , and Egg (1) . Whisk everything until well combined.
Step 5
Once you've grated the Honeycrisp Apples (100 g) , remove all liquid by squeezing with a clean paper towel Add grated apples to wet ingredients and stir again to combine.
Step 6
Combine wet ingredients with dry ingredients, and gently mix together.
Step 7
Use a 1/4 cup measuring cup to scoop the cookie mixture onto the baking sheet. I used the bottom side of measuring cup to gently flatten each cookie.
Step 8
Bake cookies for 18-20 minutes or until cooked through and golden brown.
Step 9
For a sweeter cookie, allow to cool and drizzle with homemade Caramel Sauce (240 mL) .
