Step 1
Rinse
Quinoa (85 g)
then add to 1 cup water in small/medium pot, bring to a boil and simmer 15 minutes. Set aside to cool.
Step 2
Chop
Salad Greens (450 g)

Granny Smith Apples (2)
, and
Pecans (75 g)

Step 3
Add greens to large bowl, top with cooled quinoa,
Dried Cranberries (60 g)
,
Feta Cheese (110 g)
, apples and pecans. Toss to mix well.
Step 4
Stir in ¼-1/3 cup your favorite dressing, continue to toss until well combined. Or, serve without dressing and allow individuals to add their own. Serves 10-12 as a side. Store leftovers in refrigerator.
