Step 1
Push Cauliflower (1 head) through a food processor using the grating attachment. If you do not have the grating attachment, you can use the regular blade, but it will be cut differently.
Step 2
Heat Sesame Oil (15 mL) in a wok or large nonstick skillet over high heat. Add cauliflower. Cook for one minute.
Step 3
Add Scallions (1 bunch) , Frozen Green Peas (25 g) , and Carrots (9 g) then stir fry until cauliflower is just beginning to turn tender, 2-3 minutes.
Step 4
Add Garlic (2 cloves) and continue to stir fry for about 30 more seconds.
Step 5
Create a well in the center of the cauliflower rice and add 1 tsp sesame oil. Crack an Egg (1) in the center and scramble. Once cooked, mix the egg in with the cauliflower rice. Add Salt (to taste) , Ground Black Pepper (to taste) , and Soy Sauce (45 mL) .
Step 6
Serve hot.
