Step 1
Preheat oven to 350 degrees F (180 degrees C) and place muffin liners in the pan.
Step 2
To make the flax egg, combine Flaxseed Meal (20 g) and Hot Water (90 mL) in a small bowl. Let sit for approximately 5 minutes until gel-like.
Step 3
In a large bowl, stir together Whole Wheat Flour (240 g) , Baking Soda (5 g) , and Salt (3 g) .
Step 4
In a separate bowl, mash Bananas (4) and stir in Unsweetened Apple Sauce (125 g) , Vegan Sugar (100 g) , Vegetable Oil (120 mL) , flax egg mixture, and Pure Vanilla Extract (5 mL) .
Step 5
Pour the wet ingredients into the dry ingredients until they are combined. It will be thick. Then, stir in Cacao Baking Chips (175 g) .
Step 6
Use a scoop to place the batter into the muffin liners. You should have 12-15 muffins. Bake for approximately 20 minutes. Muffins are done when you place a toothpick in them and it comes out clean.
Step 7
Allow muffins to cool and enjoy!
