Step 1
Preheat oven to 350 degrees F (180 degrees C) and place muffin liners in muffin pan.
Step 2
In a small bowl combine
Flaxseed Meal (20 g)
and
Water (90 mL)
and let sit for approximately 5 minutes until gel-like to make the flax egg.
Step 3
In chopper or food processor, finely chop the
Zucchini (130 g)
.
Step 4
In a large bowl stir together the dry ingredients:
Whole Wheat Flour (240 g)
,
Baking Soda (5 g)
and
Salt (3 g)
.
Step 5
In a separate bowl prepare the wet ingredients. Mash the
Bananas (2)
and stir in
Unsweetened Apple Sauce (190 g)
, zucchini,
Pure Maple Syrup (60 mL)
,
Vegetable Oil (60 mL)
, and
Vanilla Extract (5 mL)
.
Step 6
Pour the wet ingredients into the dry ingredients and stir until combined. Then, stir in the
Cacao Baking Chips (175 g)
.
Step 7
Use an ice cream scoop to place the batter into the muffin liners.
Step 8
Bake for approximately 15-20 minutes. Muffins are done when you place a toothpick in them and it comes out clean.
Step 9
Allow muffins to cool and enjoy!
