Step 1
Juice the
Lemon (1)
to get 0.5 fluid ounce of lemon juice. Optain a lemon peel, with a sharp knife cut between the lemon peel and white membrane of the lemon, making sure you get as little of the white membrane as possible.
Step 2
Combine lemon juice,
Simple Syrup (15 mL)
, and
Gin (30 mL)
over ice in a shaker. Stir vigorously.
Step 3
Pour into champagne glass.
Step 4
Top with
Champagne (to taste)
and garnish with lemon peel.
