Step 1
Preheat the oven to 400 degrees F (200 degrees C). Grease and flour the ramekins with
Almond Meal (to taste)
.
Step 2
Roughly chop the
Dark Chocolate (85 g)
and place it in a heat safe bowl.
Step 3
In a double boiler, melt the dark chocolate and
Unsalted Butter (150 g)
.
Step 4
While the chocolate is melting, whisk
Eggs (2)
and
Granulated Sugar (100 g)
together. When blended, add
Almond Meal (20 g)
and stir just to combine.
Step 5
When chocolate is melted, pour it slowly into egg mixture, whisking to combine. Go very slowly at first to make sure the eggs do not cook.
Step 6
Pour the mixture into the prepared ramekins. At this point these can be placed in the fridge to be baked and served later.
Step 7
If they have not been refrigerated, bake the lava pots for 10 minutes. If chilled, bake them for 12 minutes.
