Step 1
Add Dry Wheat Berries (30 g) to 1 cup water, bring to a boil then simmer for an hour or until tender, drain and set aside.
Step 2
While the wheat berries cook, add Spring Mix and Baby Spinach (250 g) to large bowls, layer with Canned Chickpeas (100 g) , Fresh Blackberries (145 g) , Shredded Cheddar Cheese (30 g) , Cauliflower (160 g) and Pepitas (35 g) .
Step 3
Once the wheat berries have cooked and cooled, add to salad, top with dressing of choice and serve.
