Author's Notes

For the bread crumbs, I just toasted a piece of sprouted bread until it was nice and crispy, let it cool, then broke it into small crumbs.

Cooking Instructions

Step 1
Cook the Green Lentils (190 g) to the directions on the package. Slightly mash the lentils.
Step 2
In a large bowl combine mashed lentils, Breadcrumbs (25 g) , Egg (1) , Feta Cheese (75 g) , Goat Cheese (60 g) , McCormick® Garlic Powder (3 g) , Dried Oregano (2 g) , Paprika (1 g) , Sea Salt (2 g) , and Ground Black Pepper (as needed) . Stir until well combined then place in the fridge for 10 minutes.
Step 3
Meanwhile, preheat oven to 400 degrees F (200 degrees C) and line try with parchment paper.
Step 4
Measure out fairly large spoonfuls of lentil mix and roll into balls.
Step 5
Place all rolled meatballs on parchment covered tray.
Step 6
Bake meatballs for 15 minutes.
Step 7
Flip and bake for another 15-20 minutes or until crisp and firm.
Step 8
While the meatballs finish up, heat Barbecue Sauce (80 mL) in a small saucepan on the stovetop. Once you remove the meatballs from the oven, brush them with warm bbq sauce and serve.
Step 9
We ate them both by themselves and in a bun, both delicious!
