Step 1
Slice up the
Red Apple (1)
, and remove the central seeds.

In a skillet, melt the
Coconut Oil (30 mL)
and
Maple Syrup (35 g)

Add the sliced apple and cook for 1 minute, then add
Orange Juice (15 mL)
. Let cook for 4 min or until apple turns soft. Set aside

In a saucepan, bring
Coconut Milk (200 g)

Soy Milk (100 g)
,
Water (100 g)
,
Star Anise (1)
,
Vanilla Extract (2 mL)
, and
Ground Cinnamon (1 g)
to a boil

Add the
Old Fashioned Rolled Oats (100 g)
. Turn down to low heat, let the oats simmer while you stir with a whisk (about 10-15 min). When creamy, add the
Almond Butter (20 g)
and stir it in. Turn the heat off.
Step 6
Pour the oatmeal in 2 serving bowls. Top with the cooked apple and the juice. Serve it right up! (Don't eat the star anise, it's just for flavoring).
