Step 1
Dissolve the
Gelatin Powder (5 g)
in
Water (30 mL)
. Set aside.
Step 2
Make some very strong
Espresso (30 mL)

In a blender, combine the
Heavy Cream (200 mL)
,
Ricotta Cheese (250 g)
,
Ground Coffee (8 g)
,
Powdered Confectioners Sugar (100 g)
, and the
Vanilla Bean Paste (3 g)
.
Step 4
Blend until all ingredients are combined and creamy.
Step 5
Pour into a saucepan.
Step 6
Bring it to a gentle boil, then remove pan from heat and add in the gelatin mixture. Stir until gelatin dissolves.
Step 7
Portion up the cream into 6 containers. Let them stand on your kitchen counter until cool, then refrigerate them for about 2 hours.
Step 8
Decorate with a coffee kernel and serve. Enjoy!
