Step 1
Start by cutting up the Green Cauliflower (1 head) , Orange Cauliflower (1 head) , and Purple Cauliflower (1 head) into florets and washing them under running water.
Step 2
In an ovenproof skillet, heat up the Extra-Virgin Olive Oil (30 mL) and Garlic (2 cloves) until the cloves turn golden-brown in color. Use low-medium heat, you want to slowly infuse the oil with garlic flavor.
Step 3
Add the cauliflower florets, Chili Powder (3 g) , and season with Salt (to taste) and Ground Black Pepper (to taste) . Stir on medium heat for a few minutes. Add 1/2 cup of water, cover with a lid and let it simmer on low until the cauliflower is tender and water has reduced.
Step 4
Sprinkle the Parmesan Cheese (20 g) and place under the broiler until slightly crispy.
Step 5
Serve and enjoy!
