Step 1
Cook
Penne Pasta (480 mL)
according to package directions.
Step 2
Cut
Bacon (5 slices)
into small strips and place in a medium-high skillet stirring constantly until crispy.
Step 3
Add the
Onions (75 g)
,
Salt (10 g)
, and
Ground Black Pepper (2 g)
and cook until the onions are transparent.
Step 4
Add the
Corn (225 g)
,
Cherry Tomatoes (225 g)
, and
Fresh Thyme (2 g)
and stir together. Add the cooked and drained penne pasta, and turn the heat down to low.
Step 5
In a small bowl, whisk the
Cream (240 mL)
and
Egg (1)
together, and pour over the pasta. Sprinkle in the
Shredded Parmesan Cheese (25 g)
. Continue to stir over medium heat until the sauce thickens.
Step 6
Pour pasta into 4 oven-safe bowls, top evenly with
Shredded Cheddar Cheese (115 g)
and
Shredded Parmesan Cheese (75 g)
and drizzle with
Olive Oil (as needed)
. Place under the broiler on low until melted.
