Step 1
Dice the Carrot (1) , Celery (2 stalks) and Yellow Onion (1/2) .
Step 2
In a bowl, combine Light Mayonnaise (55 g) , Ground Chicken (455 g) , Salt (to taste) and Ground Black Pepper (to taste) . Form into 2 to 3 large patties.
Step 3
Preheat a skillet to medium-high heat and add Olive Oil (30 mL) . Place patties in the skillet and cook for about 5 minutes on the first side.
Step 4
Flip and continue to cook another two to three minutes. Remove patties from the skillet and set aside.
Step 5
In the same skillet, melt the Unsalted Butter (40 g) . Add the carrot, celery, onion, Green Peas (75 g) , Salt (to taste) , and Ground Black Pepper (to taste) . Sauté until the veggies have softened; about 7 minutes.
Step 6
Next, sprinkle the All-Purpose Flour (8 g) and cook for a minute.
Step 7
Pour the Chicken Stock (300 mL) into the skillet and stir until thickened about four to five minutes. Once thick, remove skillet from heat.
Step 8
To make the burgers, preheat broiler. Place the bottom of the Brioche (3) on a baking sheet. Top bottom bun with chicken patty and spoon carrot-pea mixture on top. Sprinkle some Shredded Mozzarella Cheese (85 g) .
Step 9
Place the baking sheet under the broiler for a few minutes or until the cheese is nice and golden brown.
Step 10
Add the top brioche bun and serve immediately! Enjoy!
