Step 1
Divide the Sweetened Condensed Milk (395 g) into two bowls. Add the Red Food Coloring (2 dashes) to the one half.
Step 2
Add half of the Unsweetened Shredded Coconut (400 g) to the bowl.
Step 3
Add half of the Powdered Confectioners Sugar (440 g) .
Step 4
Mix everything together until just incorporated.
Step 5
Empty the bowl on to a wooden board dusted with a little extra powdered sugar.
Step 6
Knead until it comes together completely. Set aside.
Step 7
Repeat the same with the remaining half of condensed milk, shredded coconut and powdered sugar.
Step 8
Turn out on to a powdered sugar-dusted surface and knead until it comes together completely.
Step 9
On a piece of baking paper, roll out and shape the white coconut ice layer into a square, about 3/4 inches thick
Step 10
Repeat with the pink coconut ice.
Step 11
Place the pink coconut ice on top of the white, and press down firmly. Leave to dry out, uncovered, for about 10-12 hours.
Step 12
Once the coconut ice is dry, cut into small squares. Serve and enjoy!
