Step 1
Peel and devein the
Medium Shrimp (20)
.
Step 2
To begin, in a medium saucepan bring
Water (960 mL)
to a boil. Slowly add in
Quick Cooking Grits (170 g)
while whisking continuously. Over medium heat, cook grits for about 4 to 5 minutes until they thicken up.
Step 3
Add in
Salt (6 g)
,
Ground Black Pepper (1 g)
,
Butter (15 g)
,
Parmesan Cheese (20 g)
, and
1% Low Fat Milk (60 mL)
. Turn the heat to low until you are ready to serve.
Step 4
Add
Extra-Virgin Olive Oil (15 mL)
to a medium skillet. Over medium heat add in shrimp and cook until translucent and tender about 3 to 4 minutes.
Step 5
Add
White Cooking Wine (22 mL)
,
Garlic (2 cloves)
and
Cayenne Pepper (as needed)
to the shrimp and cook for an additional minute, then turn off the heat.
Step 6
Take shrimp off the heat and stir in the juice from
Lemon (1)
. Season with salt and pepper to taste.
Step 7
To serve place grits in individual bowls and top with shrimp mixture. You can always serve family style too in a large platter. Drizzle each bowl/or platter with the extra sauce. Garnish with
Fresh Chives (3 g)
