Step 1
For the Dressing: Add Apple (1/2) , the juice from Lemon (1) , Water (30 mL) , Extra-Virgin Olive Oil (30 mL) , Balsamic Vinegar (15 mL) , Maple Syrup (30 mL) and Poppy Seeds (3 g) to food processor or blender and blend for 15-20 seconds or until smooth consistency is reached.
Step 2
For the Salad: Divide Fresh Spinach (960 mL) , Carrot (1) , Apple (1) , Canned Chickpeas (50 g) , Goat Cheese (55 g) and Pepitas (20 g) into two large plates or bowls, drizzle with dressing, serve and enjoy.
