Step 1
Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with cupcake papers or spray with butter flavored non stick spray. Set aside.
Step 2
In a mixing bowl, let the Butter (120 g) cool slightly. By hand, stir in Buttermilk (240 mL) , Egg (1) , and Vanilla Extract (2 mL) until well combined.
Step 3
In a separate bowl combine Old Fashioned Rolled Oats (90 g) , All-Purpose Flour (125 g) , Brown Sugar (110 g) , Baking Powder (2 g) , Baking Soda (2 g) , Ground Cinnamon (3 g) , Salt (3 g) , Ground Nutmeg (1 g) , and Ground Allspice (as needed) .
Step 4
Gradually add the dry ingredients into the wet mixture. Stir until the batter is just combined, do not overstir.
Step 5
Gently fold in the Apple (1) .
Step 6
Spoon the mixture into the muffin pan, filling each cup two thirds full.
Step 7
Bake for 20 minutes, or until a toothpick inserted in the middle is clean.
Step 8
Serve warm with butter and enjoy!
