Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a large bowl combine Buckwheat Flour (150 g) , Coconut Sugar (60 g) , Corn Starch (40 g) , Baking Powder (4 g) , and Salt (1 pinch) .
Step 3
Next, add in the Egg (1) and Oil (60 mL) . Stir the mixture with a spoon first, then use your hands until you get a nice smooth dough.
Step 4
Place the dough between 2 parchment sheets. Flatten the dough with a rolling pin, cut it into shapes with any favorite cookie cutter, and place the cookie onto the parchment-lined tray.
Step 5
Transfer the tray to the preheated oven and bake at 350 degrees F (180 degrees C) for about 10 minutes or until the edges start to color.
Step 6
Let the cookies cool on a wire rack before serving.
