Author's Notes

The bread can be stored in the fridge for up to 5 days. Before serving, reheat the banana bread in the oven or microwave.

Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C). Then line a loaf pan with parchment paper and set it aside.
Step 2
In a large bowl, mash Bananas (300 g) with a fork. Then stir in the Organic Egg (1) , Almond Milk (55 g) , and Coconut Oil (40 g) .
Step 3
Next, whisk in the Buckwheat Flour (100 g) , Corn Starch (20 g) , Erythritol (25 g) , Baking Powder (10 g) , Salt (1 pinch) , and Cinnamon (4 g) .
Step 4
Pour the batter into the prepared loaf pan. Then, half the Banana (1) lengthwise and place it on top of the batter.
Step 5
Bake the bread in the preheated oven at 350 degrees F (180 degrees C) for about 50 minutes.
Step 6
On a cooling rack allow the banana bread to cool before serving.
Step 7
Cut the bread into slices and enjoy.
