Step 1
With a spiralizer, make strands from the Zucchini (1) .
Step 2
In a skillet heat Extra-Virgin Olive Oil (45 mL) and sauté Cherry Tomatoes (300 g) with Crushed Red Pepper Flakes (1 pinch) , Dried Oregano (2 g) , Garlic (1 clove) and Capers (to taste) for 1 minute on medium-high heat.
Step 3
Add the zucchini "noodles" and cook, tossing for 2-3 minutes.
Step 4
Plate it then sprinkle with Pine Nuts (to taste) , Parmesan Cheese (to taste) , and Fresh Basil (to taste) .
