Step 1
Heat skillet then add
Olive Oil (15 mL)
. When oil is hot, add

. Cook for about 3 minutes over medium-low heat, stirring occasionally.

Cook for 10 to 15 minutes, stirring occasionally. Taste and adjust seasoning if desired. Turn the heat down to low and make a small well for each egg.

Add the
Eggs (2)
, one per well. Season with

Ground Black Pepper (to taste)
. Cook covered until eggs are done for about 3 to 6 minutes, depending on how runny you like the yolk.
