Step 1
Place the
Sweet Potatoes (2)
in a microwave-safe bowl and steam in a microwave oven with 1 tablespoon water in them for 2-3 minutes or until tender.
Step 2
Brown
95/5 Lean Ground Pork (455 g)
in a skillet, drain the grease. Then place in the crock pot.
Step 3
Add your
Diced Tomatoes (1 can)
, sweet potatoes,
White Onions (160 g)
,
Cauliflower (215 g)
,
Chicken Broth (480 mL)
, and mix all together.
Step 4
Finally, add your
Garlic (3 g)
,
Chipotle Peppers in Adobo Sauce (2)
,
Ground Cumin (2 g)
,
Paprika (1 g)
,
Chili Powder (as needed)
, and
Ground Black Pepper (as needed)
. Add
Bell Peppers (85 g)
here if you are using it.
Step 5
Stir and cook on high for 3-4 hrs. If you browned your meat prior then cooking time will be less. Around 1-2 hrs high, checking at 1 hour or so.
Step 6
Add more paprika, black pepper, or
Sea Salt (to taste)
when finished cooking, if desired.
Step 7
Garnish with
Fresh Cilantro (to taste)
and
Jalapeño Peppers (to taste)
. Top with cheese, tortilla chips, or your favorite toppings.
