Step 1
Preheat the oven to 150 degrees C (300 degrees F).

Mix
Caster Sugar (25 g)
and
Eggs (2)
until pale and well combined.
Step 3
In a sauce pan, on low heat, gently heat the
Fresh Cream (90 g)
and
Milk (40 g)
without bringing to boil.
Step 4
Pour the heated milk and cream into the sugar and egg mixture while whisking continuously to ensure the egg doesn't curdle.
Step 5
Add
Vanilla Essence (5 mL)
.
Step 6
Strain the liquid to a small size bakeware like a ramekin.
Step 7
Place it in a baking dish and pour water to make a water bath.
Step 8
Bake for 40 minutes to 1 hour.
Step 9
When done, set aside to cool.
Step 10
Sprinkle
Caster Sugar (50 g)
on top, use a blow torch to melt sugar and caramelize. Serve and enjoy!
