Step 1
Marinate chicken: take a large mixing bowl, add
Chicken (500 g)

Corn Starch (5 g)
,
Soy Sauce (30 mL)
,
Sesame Oil (10 mL)
and mix well.

Prepare the sauce: take another mixing bowl and dissolve the
Chicken Stock Cube (1)
in enough water to do so. Add
Caster Sugar (7 g)
and
Oyster Sauce (60 mL)
, then mix and set aside.
Step 3
Boil water in a big sauce pan and add
Rice Noodles (500 g)
.
Step 4
Cook for 5 to 8 minutes and drain the water.
Step 5
Heat
Vegetable Oil (15 mL)
in a deep bottomed skillet and add
Garlic (5 cloves)

Step 6
Add chicken and keep frying it till it turns to a pale color. Keep aside.
Step 7
In the same pan, add
Carrot (1)
,
Zucchini (3)
,
Bok Choy (2)
, and
Snow Peas (10)
.
Step 8
Add the prepared sauce and keep stirring until the vegetable is half way cooked.
Step 9
Add the chicken and noodles and toss them well.
Step 10
Garnish with
Scallions (to taste)
