Step 1
Preheat your oven to 350 degrees F (180 degrees C). Line a baking pan with parchment paper.
Step 2
Separate the Eggs (2) yolks from the egg whites. Whip up the egg whites firmly.
Step 3
In a blender, add Blood Orange (1) with the egg yolks, Brown Sugar (120 g) , Oil (75 g) , and Ricotta Cheese (125 g) . Blend it for a few seconds.
Step 4
Transfer the mixture into a bowl and gently mix in the Whole Wheat Flour (180 g) , Baking Powder (1 tsp) , and Salt (1 pinch) . Then slowly fold in the whipped egg whites.
Step 5
Transfer into the parchment-paper-lined baking pan and bake in preheated oven for 45-50 minutes or until a tooth stick placed in the center comes out dry.
Step 6
Let the cake cool down completely, then slice it up and serve it!
