Step 1
Preheat your oven at 350 degrees F (180 degrees C).
Step 2
In a bowl dissolve the
Granulated Sugar (4 g)
and
Fresh Yeast (20 g)
into the
Kefir Whey (40 g)
.
Step 3
Add
All-Purpose Flour (130 g)
and using a spoon, stir all the ingredients together.
Step 4
Cover with plastic wrap and let sit for 1 hour, or until bubbling and doubled in size.
Step 5
Stir the
Water (45 mL)
and
Flaxseeds (10 g)
together then set aside for 10 minutes. Add in the flax mix,
All-Purpose Flour (400 g)
,
Soy Milk (250 g)
,
Cane Sugar (60 g)
,
Coconut Oil (60 mL)
, zest of the
Orange (1)
,
Salt (15 g)
, and
Vanilla Bean Paste (3 g)
to the bowl with the batter.
Step 6
Add the
Candied Orange Peel (140 g)
and
Dark Chocolate (100 g)
then knead all the ingredients together until you get a smooth, elastic dough. It will be quite sticky but that’s totally normal. Cover with plastic wrap and place it in your oven with the light on for 2 hours or until doubled in size.
Step 7
After 2 hours, divide the dough into 2 pieces and place both into a cross shape in the dove cake form.
Step 8
In a blender, blend white of the
Eggs (40 g)
,
Granulated Sugar (50 g)
and
Almonds (50 g)
until creamy. Brush that on top of the cake. And top it off with some more whole
Almonds (to taste)
.
Step 9
Bake in a preheated oven at 350 degrees F (180 degrees C) for 40-50 min.
Step 10
Remove from the oven and let cool completely. Store into a plastic bag for up to 3 days.
