Makes one 7-inch cake.

This cake stores well for a couple of days at room temperature or for up to 5 days in the fridge.

Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a bowl whisk together Egg Whites (200 g) , Soy Yogurt (150 g) , and Granulated Erythritol (30 g) .
Step 3
Add the Lupin Bean Flour (20 g) , Soy Flour (30 g) , Coconut Flour (10 g) , Ground Cinnamon (8 g) , Baking Powder (10 g) , and Salt (1 pinch) and stir to combine. The batter will be quite runny, don’t worry, that’s how it is supposed to be.
Step 4
Gently stir in the Apples (100 g) and pour into a baking pan lined with parchment paper. You can decorate the top with some extra slices of apple and a bit of granulated erythritol sugar.
Step 5
Bake in preheated oven for about 45 minutes. Make sure the cake is cooked through by sticking a toothpick into the center, it needs to come out clean.
Step 6
Let the cake cool down completely before removing it from the pan.
