Step 1
Preheat oven to 350 degrees F (176 degrees C).

Into the bowl of a stand mixer, add
Unsalted Butter (225 g)
and
Granulated Sugar (300 g)
. Mix until smooth.

Add
Eggs (2)
and mix until smooth.
Step 4
Add
Vanilla Extract (5 mL)

Salt (2 g)
, and
Baking Powder (6 g)
. Mix until smooth.
Step 5
Add the
Gluten-Free All-Purpose Flour (430 g)
and mix until well combined. Do not over-mix.
Step 6
Shape the dough into balls and roll them in
Cinnamon Sugar (to taste)
to coat. Transfer cookies to a baking sheet and press down to flatten them out slightly.
Step 7
Bake cookies for 10-15 minutes.
Step 8
Allow cookies to cool on a wire rack before serving.
