Paniyaram / Appe are spiced dumplings mostly made with rice batter but this time I used sooji for this recipe. Appe can be made plain, spiced or sweet. They are crispy from out and soft from within. They are gluten free as well. There are so many different name of this dish, some called called "Appe" or some called "Paddu". These lovely little dumplings are also called hoppers. It’s a really good option for breakfast or evening snacks

Beat the Dahi (1 cup) with Water (1/2 cup) and then add the Semolina (1 1/2 cups) and Salt (to taste) to make batter of dropping consistency.

Cover and keep aside for 4 hours to ferment.

Then, add the Tomatoes (2 Tbsp), Onions (2 Tbsp), and Green Chili Pepper (1) to the fermented batter.

Heat the appe mould on a medium flame and grease it with a little Oil (1 Tbsp).

Take a kadai or pan, heat Oil (1 Tbsp) and add Mustard Seeds (1 tsp), splutter it & add Curry Leaves (7), Fresh Cilantro (1 Tbsp) and switch off the flame.

Now add this tadka into the batter. Mix well. At this time add Baking Soda (1 pinch) into batter.

Pour a spoonful of the batter into each mould.

Cook till the outer surface becomes golden brown and then turn each appe upside down using a fork so as to cook the other side.
