Vegan Stuffed Avocado

Skip the shell and just use an avocado to hold all of the taco goodness in these Vegan Stuffed Avocados. They are so stinking delicious!

The Whole Serving

Serves 8

15 Ingredients

1/2 cup Textured Vegetable Protein

1/2 cup Hot Water

2 1/2 tsp Taco Seasoning

1 cup Cherry Tomatoes

3 tbsp Jalapeño Pepper

3 tbsp Red Onion

1 tbsp Cilantro

to taste Salt and Pepper

1 Lime

6 Avocado

3/4 cup Non-Dairy Milk

1 tbsp Freshly Squeezed Lime Juice

2 clove Garlic

to taste Lime Wedge

to taste Sea Salt

Steps 1

Place Textured Vegetable Protein in a medium bowl. Pour Hot Water over the protein, add the Taco Seasoning, stir and allow to set until water is absorbed completely.

While protein is absorbing the water, mix together the Cherry Tomatoes, Jalapeño Pepper, Red Onion, and Cilantro. Season with Salt and Pepper, cover and set aside.

Slice and juice the Lime. Slice and pit the Avocado and pour the lime juice over them to prevent browning.

Steps 4

Place Avocado, Non-Dairy Milk, Freshly Squeezed Lime Juice, and Garlic in a blender and process until smooth. Taste and season with Sea Salt. Transfer to serving dish.

Steps 5

Scoop two heaping tablespoons full of the textured vegetable protein into each avocado, spoon some of the tomatoes and avocado cream over the vegetable protein, and garnish with more cilantro and Lime Wedge. Enjoy!
